I purchased a pound of U15 prawns for the recipe. It was my first time peeling and deveining prawns myself; it's actually really easy. Did you know the purpose of deveining is to remove the digestive track!?!?! Maia was kind of grossed out by the process, but I thought it was cool to to identify which prawns died on a full stomach and which ones died on an empty stomach. Mint Pea and Endive Salad

I have a new favorite website, Rouxbe.com, an online video cooking school. Both tonight's appetizer (Mint Pea and Endive Salad) and main course (Lemon-Coriander Prawns) were from Rouxbe. The site has both video lessons (like sharpening your knives) as well as video recipes which are incredibly inspiring.The salad turned out very well. The sweet honey in the dressing complimented the bitterness of the belgin endives nicely.
